Chef J grew up gardening, hunting and fishing. He was taught to respect the land and the bounty that it provides. Allow him to give you and your guests a unique experience through his passion of foraging, hunting and cooking. Our Wild Game dinner is one that you and your guest will not soon forget! It is a 7 course meal that includes animals seen day to day in the woods (with the exception of the Bison and Ostrich!) and prepared for your culinary experience.
A light pasty baked golden brown with shredded rabbit meat, carrots, potatoes, onions and seasoning
Homemade ravioli stuffed with ground squirrel, and topped with a truffle parmesan cream sauce
Locally sourced quail oven roasted and served whole
Pheasant breast roulade with wild game sausage, wrapped in bacon and pan seared golden brown
Braised then seared duck breast served sweet demiglace over quinoa
2 Bison meatballs served with our homemade blueberry dipping sauce
NC sourced ostrich seared medium-rare and served with choice of madeira sauce, fig port wine reduction, truffle sauce sauce or calvados sauce
